Best type of oil/transmission cooler for towing

I am planning on doing some towing with my '87 Dolphin, and have been doing some research.  I have read that it's best to get fluid coolers when the truck is going to be working harder.  My question is about which type of cooler — plate, or tube and fin — is best to improve performance and prevent breakdown when towing.  The general consensus on towing, as far as power is concerned, is that the truck will pull, but of course it will only pull as quickly as the power will allow.  The trailer towed is fitted with brakes, so braking (and handling?) isn't the issue at hand.  I just want my engine — which runs like a top after 100K miles — to work as effortlessly as possible so as not to damage it.
