Installing Leather Seats in an Avensis

Hi, 

I want to replace the cloth seats in my 2008 Toyota Avensis D4D Hatchback with leather seats with electric controls (which I've already bought). 

Could someone please advise me how to do this properly? I don't want the seats to be "live" all the time, only when the key is turned.

I'm also wondering if it is possible to control the leather seats manually using the manual controls from my old seats?
