USB connection - Can you use a hub

In my last car I liked to have a USB stick with music on for when I got fed up with the radio. Its a shame there is only one USB connection has anyone tried connecting a USB stick and phone for car play at the same time?

In a word, No

if you are using AA or AC it takes the full bandwidth of the USB (2.0) unless you have wireless carplay

Simplest solution is to put your audio on your phone

If you're using Car Play, do you not have a service to get your music?  I know most these days use Spotify.  There's also YouTube music and my favourite, Plexamp.  I've used the Toyota audio once on my test drive, I just used bluetooth to connect my phone and then before pick-up I asked them to install AA/Car Play and use AA all the time with Plexamp playing my music from my Plex server.
