What do i need to use Apple air play in my new to me Yaris?  I have the option of a cable ipod connection but when i plug that in all I get is the option to play music etc. I want to use airplay then I can get a sat nav etc etc from my phone.

Wont work with your model / year. 
You will need to replace the head unit with an aftermarket unit that has carplay built in. 
carplay did not appear on toyota models until 2020 and then only selected models.
