Can anyone please tell me why there are no service or workshop manuals available for later Yaris  models ie 2010 upwards

have you looked on https://www.toyota-tech.eu ? The information that you seek should be there albeit quite possibly chargeable (but also downloadable so you need pay only once).

I imagine that modern cars are beyond most peoples ability these days (heck, few seem to even do regular fluid, pressure etc. checks) plus with that info being available online from the manufacturers (as above) the market for 3rd party publications became non-viable for most.
